Pumpkin n Cocoa muffins

Mix all ingredients below and cook for 30 minutes at 350 F.
2 eggs
2 T ground flax seed
1/4 cup water
1/8 cup canola oil
1/2 cup milk
1 1/4 cup pumpkin
2 T cinnamon
1 t vanilla
3/8 cup cocoa
2 cups whole wheat flour
1/2 cup rolled oats
1/4 cup agave
1 t baking soda
1 t baking powder
Healthy ingredients with low sweetening and oil. Will post later how they turned out. As I type this, I am thinking that some nuts added would be nice???

They cooked up well and were moist. It was weak in the chocolate flavor expected. I would try a more spiced pumpkin pie type of flavor next.

Cajun Lemon Shrimp

Serves 4
Serving size: 1/4 recipe

1 lb. fresh shrimp, cleaned and deveined
2 tsp. crushed oregano
1 1/2 tsp. fresh thyme
2 tsp. paprika
1/2 tsp. cayenne pepper
1 Tbsp. olive oil
Dash black pepper
Juice and zest of 1 lemon

1. Combine all ingredients (except lemon juice and zest) and marinate for 1 hour in the refrigerator.
2. In a preheated sauté pan, quickly cook shrimp. Deglaze with lemon juice and toss, coating shrimp in the sauce. Serve immediately.

2 lbs dry beans
3 lbs chicken
6 green and red peppers
4 cups chopped onions
8 garlic cloves
28 oz crushed tomatoes
2 TBsp cumin
2 TBsp chile powder
1 tsp ground red pepper
2 TBsp paprika
1 TBsp black pepper
