Pumpkin n Cocoa muffins

Mix all ingredients below and cook for 30 minutes at 350 F.
2 eggs
2 T ground flax seed
1/4 cup water
1/8 cup canola oil
1/2 cup milk
1 1/4 cup pumpkin
2 T cinnamon
1 t vanilla
3/8 cup cocoa
2 cups whole wheat flour
1/2 cup rolled oats
1/4 cup agave
1 t baking soda
1 t baking powder
Healthy ingredients with low sweetening and oil. Will post later how they turned out. As I type this, I am thinking that some nuts added would be nice???

They cooked up well and were moist. It was weak in the chocolate flavor expected. I would try a more spiced pumpkin pie type of flavor next.

The healing is going well.....

It has now been six weeks since my bicycle accident and I am doing well. The many cards, Emails and well wishes helped out tremendously as many days were challenging. The bones and body are healing the fastest, with a slower pace for the nerves and neurons. I have some issues with one eye and balance that the specialists say will take six months to a year to resolve.

My personal challenge was to develop patience which I lacked before. I wanted everything to be healed immediately but am now trying my hardest to be patient with varying success. It does look like I will heal near 100% though except for my weight which I hope to keep down, to my advantage on the hills. The trip and accident has me down about forty pounds and I hope to keep thirty off when I start riding again.

I have been going to therapy for physical, occupational, and communication to help me get the body and mind back together at "Bryn Mawr Rehab Hospital"

The rehabilitation work at the hospital and my home has me very functional for home and work tasks. More has to be done to return me to where I want to be, but I am extremely happy to have progressed as fast as I have. I just need patience for the longer neuron mending. :-)
